You don't have time. You need to eat. You don't know what to do? Don't panic! This vegan sausage with sauerkraut dish is here to save the day. A simple yet delicious recipe the whole family will love!
I'm a big fan of planning things ahead of time. Planning is very effective in reducing stress and setting yourself up for success. You take away a lot of the pressure off the actual thing that needs to be done and that's huge.
In many cases, it's easier to just follow the plan than having to use our very precious brain power to try to figure out the simple things in life. Like: what on Earth am I going to have for lunch today. You could be using that energy in a million different things.
Planning meals is my thing so the recipe we are making will allow you to get ahead of yourself. So if you know you're headed into a crazy week this vegan sausage meal comes super handy. You can have it ready in 20 minutes or less.
If you want to reduce that time even more, you can make some of the elements ahead of time and just heat up everything right on the spot. This will save you a ton of time and you won't have to do deal with much cleaning after you are done eating.
We have mashed potatoes, the perfect side dish to make ahead of time. It's very easy to store and reheat, and it goes well with many meals. I like to make a big batch over the weekend. Having the mashed potatoes ready will reduce your overall cooking time by a good 10 minutes.
We also have vegan sausage, which is the easiest thing to cook. You only have to roast it for about 5 minutes or until they have a nice golden brown colour all around. It doesn't take long so keep a close eye on them.
Even though I'm not a big fan of processed food, I do take advantage of its practicality every once in a while. Especially when I have to feed a lot of mouths. I wouldn't have it on a regular basis but now and then, I think is fine.
And since we have other elements on our plate aside from the vegan sausage we are balancing things out. The mashed potatoes made with fresh ingredients and a good serving of sauerkraut will provide us with a ton of nutrients.
Sauerkraut is fermented cabbage and the fermentation process gives it a slightly sour taste. But it also produces beneficial probiotics that are really good for our bellies and for our overall health.
Since the probiotics are live bacteria I wouldn't recommend heating up the sauerkraut too much. You can toss it on the pan for a few seconds just so it's not fridge-cold but we really don't want to lose its incredible properties.
Serve the vegan sausage with the sauerkraut and the mashed potatoes on the side and add some mustard. And there you have it, hands down, the easiest quickest lunch you've ever made!
