Thai Jackfruit Noodles

We have plenty of Asian inspired recipes here at but it seems there's always something different to try. In today's recipe, we are using an ingredient we hadn't used before. We are making a delicious bowl of Thai Jackfruit Noodles.

Do you ever feel like you're craving something but you have no idea what that is? Well, I get that often. Sometimes I think about all the possibilities and I just overwhelm myself. I know what kind of food I want but I don't know exactly what. 

Even though it can be annoying at the time and I end up feeling like a little kid that's about to throw a tantrum, some good things also come out of this frustration. This Thai jackfruit noodle recipe was born out of one of those indecisive moments. 

Thai Jackfruit Noodles ingredients

I was certain I was craving Thai food, but there are so many options to choose from! So, I whipped out all my Thai curry and noodle recipes but nothing really caught my eye. I really wasn't feeling it. I went to my pantry and to my surprise I found a can of jackfruit I had completely forgotten about. 

Instead of trying to force that into a Thai curry I came up with a Thai Jackfruit noodle recipe. It's easy to make, you can have it ready in 15 minutes and it is so jam-packed with flavour you will have a hard time believing it is actually a healthy meal. 

I hadn't really used jackfruit that much before even though I see it all the time. In Asia, this fruit is plentiful, you can find it fresh at every market. There are innumerable dishes that use jackfruit as the main ingredient. And that's exactly how we are using it in this recipe, I'm just adding a few other veggies, a rich flavourful sauce, and some mie noodles.

Jackfruit is now becoming more popular in Western countries, especially among vegans and vegetarians. It's a super healthy fruit packed with nutrients and it has a wide range of health benefits. It's rich in fibre, it contains protein and the ripe jackfruit has a fairly high amount of carbs. 

Other than the health benefits, jackfruit has become such a hit because of its consistency and appearance. It's very similar to shredded meat. You will see jackfruit in a lot of vegan pulled pork recipes, vegan tacos, vegan bbq chicken, and all sorts of other meals that involve a shredded form of meat.

The flavour in jackfruit is very subtle, but we have a sauce that will give us all the Asian flavours I was craving. It is made with peanut butter, soy sauce, maple syrup, sriracha sauce, lime juice, and coconut milk. You can only imagine what this tastes like! 

All you have to do is mix the ingredients for the sauce, sauté the veggies, mix them well and serve them on a bed of mie noodles. You will love everything about this recipe, from the delightful aromas, the incredible taste and how easy it is to make. Our Thai jackfruit noodles are an all-in-one!

For the noodles

  • 1 cup baby spinach (washed)
  • 3 cloves garlic (minced)
  • 6 oz mie noodles
  • ½ medium red bell pepper (thinly sliced)
  • ½ cup red cabbage (shredded)
  • 2 medium scallion (thinly sliced, keep a bit for garnish)
  • 1 tsp toasted sesame oil
  • 1 cup young canned jackfruit (drain and remove that hard bits, pull the jackfruit with a fork)

For the sauce

  • ½ cup coconut milk
  • 2 tbsps light soy sauce
  • 1 lime (juiced)
  • 1 tbsp maple syrup
  • 3 tbsps peanut butter
  • 1 tsp sriracha sauce
  • ½ cup water


  1. Heat up the oil in a big skillet and saute the scallion, garlic, cabbage and red bell pepper for 5-7 minutes.
  2. Add the jackfruit to the skillet and stir fry for an additional 5 minutes.
  3. In a bowl mix all the ingredients for the sauce and adjust the taste.
  4. cook the noodles according to the instructions on the package.
  5. Add the sauce to the vegetables and heat it up properly.
  6. Serve noodles with the sauce and add the garnish, enjoy!
