Swabian Noodles with Lentils

Ingredients

For the swabian noodles

  • ½ tablespoon olive oil
  • 1 tsp sea salt
  • ¼ cup semolina
  • 1 cup soda water
  • 1½ cups wheat flour

For the lentils

  • 2 tbsps apple cider vinegar
  • 1 leaves bay leaf
  • 1½ cups brown lentils (rinsed)
  • 1 medium carrot (cleaned and cut into small cubes)
  • 2 tsps olive oil
  • 1 medium onion (thinly sliced)
  • 3 cups water

For the vegan sausage

  • 4 pieces vegan sausage

For the seasoning

  • 2 tbsps mustard
  • 1 tsp sea salt

Directions

  1. Use a big enough pot and heat up the oil, sauté the onion until fragrant.
  2. Add the carrot and stir fry for 2-3 more minutes, then add the rest of the ingredients and simmer for about 30 minutes.
  3. For the swabian noodles, use a bowl and combine the flour, salt, semolina and oil.
  4. Start adding the soda water slowly and keep mixing it with a fork.
  5. Use a small board and smear 2-3 TBS on it thinly, then cut some of the dough off into a boiling pot of water.
  6. Try to make the noodles as thin as possible, they will get bigger and float on the surface, then you can remove them and add them to a bowl.
  7. Prepare the sausages according to the instructions on the package.
  8. Add the seasoning to the lentils and serve them with some of the swabian noodles and sausage on the side, enjoy!
