Cooking can't get any easier than this. Soba noodles are a great option for an easy vegan lunch or dinner when you have to quickly whip something together. You will love this recipe that, not only takes just a few minutes to make but it's also super fresh and delicious. 

This dish has been one of my ultimate favourites for a long time. The recipe is Chinese but you can also find it in Taiwan very easily as well. Even in Japan, where soba noodles are a big thing, there are similar versions of this delicious dish.

One of the main reasons I love this recipe so much is due to its simplicity. You don't need many ingredients to make it, only soba noodles, garlic, and cucumber. Yes, that's pretty much it.

As you can see, this recipe, other than being fresh and healthy is a great and easy vegan lunch option. Especially now with the warm and toasty days, we have left from this too-short of a summer.

The second part of this recipe, and where the flavour comes from is the sauce. The sauce is also simple and everything you need to make it will be within hand-reach of your pantry. We need maple syrup, rice vinegar, soy sauce, tahini, and toasted sesame oil.

All you need to prepare the sauce is to put everything in a bowl. Give it a good whip and there you have it. A really healthy, zesty, and delicious sauce. There's no cooking, no heating, no nada involved. Super easy, right?

You will only use the stove to cook the noodles. I always follow the package instructions since they can all be slightly different. We don't want neither undercooked nor overcooked noodles. Once you get them to be perfect, get rid of the hot water and set then with ice while to make sure you stop the cooking process and to cool them down a bit. 

I love soba noodles and everything about them. They are made from buckwheat and not whole wheat which is gluten-free and it has a higher protein content than any other kind. You have to double-check the package to make sure you are buying 100% buckwheat noodles. Some brands will make them with a blend of different types of wheat and there goes your gluten-free and your protein out the window. 

Another beautiful thing about soba noodles is that they can be served both hot or cold. You can use them for all sorts of different recipes for different occasions. You can make mains, salads, soups, you name it! 

These noodles should be a staple in the kitchen of any easy-meal lover like us!

For the noodles

  • 1 cucumber (cut into small matchsticks)
  • 4 cloves garlic (minced)
  • 342 g soba noodles

For the sauce

  • 1 tbsp maple syrup
  • 2 tsps rice vinegar
  • 2 tbsps soy sauce
  • 60 g tahini
  • 1 tsp toasted sesame oil
  • 59 ml water


  1. According to the package instructions, cook the soba noodles al dente for 2-4 minutes, immediately after wash in cold water to avoided to stick together.
  2. Put the noodles aside in a bowl and add some ice while you prepare the other ingredients.
  3. Use a small bowl and mix the ingredients for the sauce.
  4. Add the cold noodles to a bowl or on a plate with sauce on top and sprinkle with cucumber and garlic, enjoy!
