Quick and Healthy Cereal Cookies with Banana and Carrot

Cookies for breakfast? This is a dream come true. Count me in! 

The quick and healthy cereal cookies with banana and carrot was born out of a mother’s desperate need to give her child healthy food, food that he would eat without a fuss. Children, just like us adults, can be very picky eaters, my son is no different. Breakfast was a struggle for us, the kind were food ended up everywhere when he didn’t like it. One day while watching him devour one of our Vegan Chocolate Chip Cookies, I thought to myself “If only I could make a healthy cookie for breakfast, my problems would be solved!” While I laughed at the idea, my mind was silently ticking over on how I could achieve it. A few days later, I had made these!

Not only has my son fallen in love with them, but us ‘big kids’ have too! One of the most beautiful parts to this recipe is you can make the cookies to any size you want, keeping the whole family happy. They are fairly moist, making them less likely to crumble or break apart and perfect for lunch boxes. It’s also a sneaky and fantastic way to get in some extra veggies.

This recipe is super easy to make and really quick! So, to make this recipe, you will need just 6 ingredients and 25 minutes. You will also need a bowl, mixing spoon, a baking tray, and some baking paper. 

To make these cookies we use banana, carrot, cinnamon, almonds, fruit muesli, and vegan chocolate chips. Combined, these ingredients offer us a host of essential nutrients including potassium, vitamin B6, vitamin C, vitamin K, various antioxidants, protein, dietary fiber, vitamin E, and magnesium (to name just a few).

The quick and healthy cereal cookies with banana and carrot is the perfect go-to food for breakfast and snacks because it’s: 

  • Family friendly. 
  • Travel friendly. 
  • Stores well.
  • Easy to make. 
  • A good source of fiber – 7g per serve. 

If you are anything like me, you will make a fair few cookies at a time, and therefore, you will need to know how to store them. Good news is, they store very well. In order to get the best results, you will need to let your cookies cool completely before placing them into an airtight container or bags. You can store these for up to 72 hours.

  • 2 medium banana (mashed)
  • 1 medium carrot (grated)
  • 1 tbsp cinnamon ground
  • ½ cup crushed almonds
  • 2 cups fruit muesli
  • ½ cup vegan chocolate chips

Directions

  1. Heat the oven to 190°C (375°F).
  2. Use a big bowl and combine all the ingredients.
  3. Split the dough into individual cookies and lay the cookies on a baking tin covered with baking paper.
  4. Place the baking tin in the oven and bake for 15 minutes.
  5. Take out of the oven, allow to cool and enjoy.
