Are you a snacker? I sure am! So, I know the struggle and why I'm here with fun and delicious Nutty Energy Bites. You won't have to bing on some greasy chips or a sugary snack ever again. In ten minutes or less and with only 4 ingredients, you will be on path 

I'm usually on the run during the week. This means that as much as I would like to have enough time to cook all the delicious food that I want to, sometimes something's gotta give. For that reason, I come up with easy vegan snack recipes that are simple and super fun to make. 

These nutty energy balls are now one of my favorite snack recipes for a handful of reasons. They cover all of my snacking needs when I'm craving something sweet or when I need a healthy post work out vegan pick me upper. 

Nutty Energy Bites ingredients

I made these little bites with 4 simple ingredients that I usually have stashed somewhere in my pantry. First of all, I used almond butter which is so yummy and creamy. I threw silvered almond to make these balls a bit more filing and to have a little crunch in there. And to add sweetness and to bind all ingredients together, we need maple syrup. 

Lastly, I wanted to have a high protein vegan snack recipe here at vegan.io since we don't see them a lot on the web. For this reason, we are simply adding Unflavored Sun Warrior protein powder. You are now getting a good kick of extra protein in your diet in the easiest way possible! 

Now that you have all the ingredients, let's get to the process. These beauties are incredibly easy to make. All you need is to combine all the ingredients in a bowl and give it a good mix until you have a somewhat homogenous mix. Then, just make the balls using your hands. I tried with a spoon but it's way easier if you get your hands in there.

If you have kids, this is the perfect recipe to get the little ones in the kitchen. I warn you, it might get messy.  But on the flip side, it is super fun! Especially when you have curious toddlers wanting to get their little hands on everything you do.

Vegan energy balls are a great snack to have around. I usually make a big batch of them and I simply throw them in the freezer. The beauty of these vegan protein balls is that you can pretty much throw them in your mouth straight after you've taken them out. You don't need to thaw them out much. 

You are going to love these vegan energy balls and how delicious they turn out. I wish I had come up with this recipe way soon. It has been an absolute life-saver recipe for my snacking needs. I know I'm eating a healthy snack, made with a few simple ingredients and oh! so delicious!

Ingredients

  • 1 cup almond butter
  • ¼ cup maple syrup
  • ¼ cup slivered almonds (toasted)
  • ½ cup unflavoured sunwarrior protein powder

Directions

  1. Combine all the ingredients in a bowl and make balls using your hands.
  2. If you feel the mixture is a bit too dry add a tiny bit of water (1Tsp -2Tbs).
