Mexican cuisine is full of wonders. One of our favourite and most traditional dishes is their tortilla soup or Aztec soup. A delicious, hearty, healthy and easy-to-make recipe that's as flavourful as it is nurturing. So let's see what's in it!
Like many traditional dishes, there are many ways to make good tortilla soup. This recipe is passed generation after generation so the recipe changes from one family to the other. This is the kind of recipe that grandma will adjust to make sure everyone at the table is a happy camper.
Some versions are a bit spicier, others are more like a stew, and depending on the region the veggies and ingredients used will vary a lot. Regardless, we can't leave out two things. One is the tomato broth and the other, the corn chips, what I'd say is the best part of this soup.
The corn chips add some crunch to our tortilla soup. Any veggie soup is much more enjoyable when it has chips in it. Especially if you have kids, chips are always a good selling point. Just be mindful that as much as we love having chips in our soup, don't go crazy here, they are quite calorie dense.
I might have made it sound as if tortilla soup is just tomato broth with corn chips. Doesn't sound great. But it is far from that, there's so much more to this delicious soup. This soup is chunky, flavourful and loaded with all the typical Mexican flavours.
To make our tortilla soup chunky and hearty we are throwing in there some onions, corn kernels, beans and my all-time-favourite, avocado. The avocado had to be included, I mean, what's Mexican food without avocado, right?!
The traditional flavours of the authentic Mexican cuisine are all in the spices. We are using chilli powder, smoked paprika, and cumin to get a bit of a smokey flavour that also has a little kick. This soup is not spicy at all, the chilli will only add flavour.
Once your soup is ready and all the aromas have smothered your home you can serve it in individual bowls. Then just sprinkle some fresh cilantro, add the sliced avocado and 3 or 4 tortilla chips, and give everyone a lime wedge so they can squeeze as much or as little lime juice as they like.
The ingredients in this tortilla soup will load you up on nutrients. This soup is very nourishing. It can bring you back from a cold or when you are feeling a bit blue. It is warm and hearty, exactly what the body and the soul need to be lifted.
You know I love anything and everything with avocado in it. But aside from that, I love everything about this soup. It's easy to make, nourishing, flavourful, and let's not forget the chips, please!
