Leafy Greens, Peas Pasta Salad

For the pasta salad

  • 1 cup frozen green peas
  • 1½ cups fusili pasta
  • 4 cups kale (remove bite size pieces from the stems)
  • 1 tsp olive oil
  • ½ cup quinoa

For the tahini dressing

  • 1 tbsp light soy sauce
  • 1 tsp maple syrup
  • 1 tbsp rice vinegar
  • 1½ tbsps tahini


  1. Cook the quinoa in water for about 20 minutes until soft.
  2. Stir fry the kale for 1-5 minutes with the oil (depending on your taste) and set aside.
  3. Cook the pasta according to the instructions on the package al dente.
  4. Heat up a small pot of water and boil the peas until soft for about 2-4 minutes.
  5. Use a suitable bowl and combine the ingredients for the dressing.
  6. Combine everything in a suitable bowl and adjust taste before serving, enjoy!
