Energy Balls with Cacao, Walnuts and Coconut

Energy balls are not only tasty and nutritious, but they are super fun to make! Prepare yourselves fellow vegan lovers, because our energy balls with cacao, walnuts, and coconut are going to leave your hands messy, your tummy satisfied, and your soul filled with happiness.

Little blissful balls – that’s what these should really be named! 

All of our energy ball recipes are highly popular and for a good reason. They are a perfect way to have a healthy snack, fill in any energy needs, use as a pre-gym/post-gym snack, or if you are like me, eat whenever you want to. Because hey, food is life! Enjoy it while you can.

To make this recipe, you will need 8 ingredients and 20 minutes. Oh, you will also love how simple it is to make these! You will also require a bowl, a mixing spoon of some sort, and a plate or tray to roll your balls on. 

Apricots, coconut milk, and quinoa flour start off our recipe for these bite size wonders. From these ingredients, we are offered a good source of fibre, vitamin C, a range of vitamin B’s, vitamin A, potassium, and protein. We then top this off with some walnuts and vegan rice protein powder for an excellent source of protein.

You can easily store your energy balls in an airtight container, in the fridge for up to 48 hours. But one of the things I like to do with these is to make a nice big batch of them, split them up into my desired serving sizes, and pop them in the freezer. They will last for up to 2 months. This method of storing makes it perfect to grab and go!

Ingredients

For the balls

  • 3 tbsps cacao powder
  • 1 cup coconut milk
  • ¼ cup dried apricots (thinly chopped)
  • 1 cup quinoa flour
  • 1 dash sea salt
  • 1 oz unflavoured sunwarrior protein powder
  • 1 cup walnut halves (crushed and roasted)

For the coating

  • ½ cup coconut flakes

Directions

  1. Mix all the ingredients together until smooth, except of the coconut flakes which need to be used for coating.
  2. Make energy balls with your hands and coat them in coconut flakes.
  3. Energy balls taste best if you serve them chilled.
