We are here to enjoy the little things in life. This vegan lasagna with Beyond Meat is one of those little things that make life so much better. You will feel like a chef and feast like a queen (or king)!
I have a lot of quick practical recipes on here for those days and weeks where it seems there's not enough time to do all the things. However, there is something super special about taking time to cook your food and enjoying the process.
Here, we have a recipe that will allow you to do just that. The recipe is still quite easy and what takes most of the time is the baking process. So it's not all that hands-on. Once we have assembled the whole thing, the vegan lasagna will go in the oven for about 60 minutes.
The fun part of making this vegan lasagna is the prep work. We need to prepare the sauce, cook the veggies and assemble the lasagna. So, we will need a few different ingredients to make the most hearty and delicious lasagna you've ever had.
I use a large pot to make everything. First, I stir fry garlic and onion until fragrant. I then add the eggplant and cook it for about 10 minutes. You have to be a bit careful here so you don't overcook the eggplant. Once it's soft you can start adding the rest of the ingredients. Otherwise, it will become a bit mushy, not good!
At this point, we are ready to add the Beyond meat. This plant-based meat substitute tastes amazing and it is super easy to cook. We have the best of both worlds without any cruelty involved and all the weird things added to the meat.
After you've cooked the Beyond meat with the veggies and spices add the tomato paste and the rest of the spices and herbs. Here is where the magic starts to happen! Your kitchen will smell amazing while you simmer the most delicious and hearty sauce.
Now that you have all this goodness ready, resist the temptation to eat it by the spoonful. We are just a couple of steps away from our delicious Beyond meat lasagna. It is definitely with the way.
A lot of people cook the pasta before assembling the lasagna. I skip this step and I lay down the pasta sheets uncooked. It will cook while it's in the oven. The juices of the sauce will ensure it's cooked al dente. You'll save yourself a step and have perfectly cooked pasta.
Now it's all about layering! First, I cover the bottom of a baking dish whit a layer of sauce. This way I make sure we don't have burnt pasta at the bottom. Then add a layer of pasta and cover it with sauce and vegan cheese. Keep repeating this stop until you are out of the sauce. I did 5 layers, it might vary.
Throw this baby in the oven for about an hour. Check that the pasta is fully cooked and there you have it! A dreamy, delicious, and easy-to-make vegan lasagna.
