If you are looking for a super delicious salad look no further. We made this Broccoli Quinoa Salad with ingredients you probably already have in your kitchen so you can have this delight on demand. 

This is not your typical broccoli salad. Here, we have a bunch of ingredients that will come together to make a delicious and incredibly healthy meal. You will be pleasantly surprised by how easy it is to put together and the fancy end result. 

First of all, we have one of my favourite ingredients to include in a salad, quinoa. As we well know quinoa is one of those supercharged foods jam-packed with nutrient. A quinoa salad will fuel you with protein, fiber, magnesium, B vitamins, iron potassium, calcium, antioxidants, etc.

Also, adding quinoa to your salads will keep your belly full for much longer. I often hear people saying they don't eat salads because they feel hungry soon after. You can avoid this by throwing some complex carbs in the mix and quinoa is a great option. 

To keep this salad simple, I decided to make it with broccoli, shallots and fresh parsley. These three ingredients are really flavourful on their own and when you put them together it's like magic, the flavour complement each other so nicely. 

The shallots and the parsley go in fresh. I cooked the broccoli for around 5 minutes, just enough so it's cooked without making it too soft or soggy. I like my veggies crunchy and I like having different textures in the same bowl. But you can cook your broccoli less or more depending on what you prefer.

The true star of this broccoli quinoa salad is the dressing. I love making it because it is super easy to make and it has the perfect creamy texture. I used soy yogurt to get the right consistency and to keep it fresh and light. Also, the taste is not too overpowering, even though the dressing will add a nice flavour I still want you to really enjoy the taste of the other ingredients. 

I like adding a few sliced almonds into this broccoli quinoa salad. If you have read some of my other recipes, I always say how much I love a crunchy surprise in my dishes. Almonds are perfect, and if you give them a quick roast in a pan, even better. 

Aside from the crunchy effect, when you drizzle the dressing on these almonds you are in for a treat. The combination of flavours is super delicious and gives it a bit of a gourmet feel. You will have a high-end salad in front of you in the comfort of your own home. 

I have this salad as a main dish. It has all the nutrients I need, it is loaded with 19 grams of protein and it will keep me full and loaded for a good while. It's really light and fresh, which makes it the perfect lunch option for any day of the week.

For the salad

  • 1 bunch broccoli (florets)
  • 5 sprigs fresh parsley (thinly sliced)
  • 1 medium shallot (thinly sliced)
  • ¼ cup slivered almonds (optional: toasted)

For the quinoa

  • ½ cup quinoa (washed or rinsed)
  • 1 cup water

For the dressing

  • 2 dashes black pepper (ground)
  • 2 tsps extra virgin olive oil (optional)
  • 1 tablespoon lemon (juiced)
  • 1 tsp lemon zest
  • 1 tsp sea salt
  • ⅓ cup soy yogurt


  1. Cook the quinoa until the water is all absorbed (around 15-20 minutes).
  2. Steam or boil the broccoli for 5-7 minutes.
  3. In a small bowl mix the dressing ingredients.
  4. Combine all ingredients in a big bowl together with the dressing, mix well and adjust taste before serving, enjoy!
