Broccoli and Green Bean Salad with Nugget Stripes

Ingredients

For the vegetables

  • 1 bunch broccoli (florets)
  • ½ lb green beans (cleaned)
  • ½ lb sugar snap pea

For the dressing

  • 1 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 3 tbsps tahini

For the topping

  • ½ tsp roasted sesame seeds (optional)

For the vegan nuggets stripes

  • 6 oz meat imitation seitan

Directions

  1. Steam or boil the broccoli for 5-7 minutes.
  2. Use a skillet and simmer green beans with a lid until tender but still slightly crisp for about 10 minutes, or less depending on size.
  3. Steam or simmer the snap peas for 3-5 minutes until slightly soft but still crunchy.
  4. Mix the ingredients for the sauce in a bowl and combine everything in a big bowl.
  5. Prepare the nuggets according to the instructions on the package and slice them into stripes.
  6. Serve the salad with some nugget stripes on top and sprinkle with sesame seeds, enjoy!
