Quesadillas are one of the many incredible dishes that Mexican cuisine has to offer. And, as much of its other dishes, quesadillas are very easy to make and super versatile. You can prepare them with all sorts of different ingredients and customise them to your personal preference.
In Mexico, quesadillas are an absolute staple. People have them for breakfast, lunch, dinner, as a snack or as finger food. You will rarely find a home where the ingredients to make quesadillas are not present.
Other than being in Mexican homes, you will find quesadillas out in the streets and at restaurant. Street food culture is a massive thing in Mexico. They have delicious food absolutely everywhere and you get to see your food being made. It's quite entertaining!
Also, Mexican street food is super fresh, they make everything from scratch. And when I say everything I mean everything, they even make the tortillas right there on the spot. You can definitely taste the difference.
Since we don't have easy access to that all those street vendors and their quesadillas I came up with something we can easily cook at home. This delicious breakfast quesadilla will take you less than 20 minutes to make. And you can find all the ingredients at your local market.
There are quesadilla recipes for any time of the day but since we wanted to have more breakfast options I made this one with that in mind. The filling is made with tofu, avocado, nutritional yeast, scallions, and a few spices that give it a bit of an eggy taste to it.
To make the filling all you have to do is sauté the scallions with the tofu, this will infuse the tofu and give it a better consistency. In a big bowl, mix the filling with the rest of the ingredients until you have a smooth paste, think of the consistency of a thick hummus.
At this point, I like to taste the filling and do all the necessary adjustments. You can add more black salt if you want it to taste more like egg or if it's not salty enough for you. Also, check the consistency and if it feels to dry you can add a little bit of water. If the avocados are not very ripe it is easy to end up in this situation.
Now that you have the perfect filling all you have to do is heat up the tortillas, spread a good amount of tofu on it, fold the tortilla in half, and roast both sides until you get that golden brown colour.
And there you go, just like that! Now you can enjoy the most delicious breakfast quesadillas in the comfort of your own home!
