Baked gnocchi is comforting food at its best. It has all the flavours, the texture and the yumminess that makes a dish hearty and inviting. So, ditch whatever you had planned for tonight's dinner and take a look at this incredible mouthwatering gnocchi recipe.

When it comes to comfort food let's say Italians know what they are doing. Their cuisine has all the comfort food we can ask for in a lifetime. I mean, they gifted the world with pasta and marinara sauce! 

But pasta is not the only contribution Italians have made to the hearty and comforting food department. There are so many more dishes that can be included in this category, I don't even know where to begin with. Some are more popular than others but, in my opinion, they are all worth trying. 

Baked Gnocchi with Spinach ingredients

The recipe that has captivated my heart lately is baked gnocchi. The little potato dumplings are so delicious, soft and fun to eat. And this recipe is the easiest thing ever that will allow you to have dinner ready in less than 30 minutes. 

I came up with this baked gnocchi recipe not that long ago. And it's now a family favourite without a doubt. Everyone loves its warm hearty flavour. And I love that it is such a practical recipe that makes my life a whole lot easier during dinner time. 

I try to plan my meals ahead of time as much as possible but sometimes life happens. And that's when recipes like these make my life easier. You can easily find gnocchi at most supermarkets so if you have nothing planned for dinner, it is easy to do a quick stop, grab a bag of gnocchi and sort out dinner on the spot. 

Also, since these little guys are made out of potato flour it is very easy to get ahold of some good gluten-free gnocchi. There are a few brands out there that offer this option, which we always appreciate.

Now that we have the gnocchi I want to share a little hack I've found. The key to perfect baked gnocchi that won't turn into mush is to fry the gnocchi beforehand. This extra step will make a big difference. You want to get a golden brown colour in order to seal them so they stay in one piece when you add the sauce. 

The sauce is what makes this dish so special, that's where all the indulging flavours are. The ingredients we are using to make the sauce are simple and will give us that hearty feeling we crave so much. As an added bonus, your house will smell amazing as soon as you throw everything in the pot. 

The last step is to get everything on an oven tray to get the baking started. At this point, it might seem we have too much sauce but don't worry. The gnocchi will suck up some of the sauce during the baking process. The result will be the most delicious baked gnocchi you've ever laid your hands on!

Ingredients

  • ½ tsp black pepper (ground)
  • 2 cups crushed tomato
  • 4 cloves garlic (minced)
  • 1 tbsp italian herb mix
  • ½ cup nutritional yeast
  • 1 tablespoon olive oil
  • 1 medium onion (thinly sliced)
  • 1 lb potato gnocchi
  • ½ tsp sea salt
  • 1 lb spinach (cleaned)
  • 8 pieces sun-dried tomatoes (thinly sliced)
  • 1 cup vegetable broth

Directions

  1. Heat up the oven to 360 F (180 C).
  2. In a skillet heat up 3/4 of the oil and roast the gnocchi on low heat until golden brown for about 10 minutes.
  3. Add the gnocchi to a plate when finished and add the leftover oil to the skillet and saute onion garlic for about 3- minutes until fragrant.
  4. Add the rest of the ingredients and give it a good stir, simmer until the spinach is withered.
  5. Transfer the sauce and the gnocchi to a baking dish and give it a good stir before you bake it for 20 minutes.
  6. Let the gnocchi cool down a little bit before serving, enjoy!
