We are more than ready for this summer season and all the barbecues and picnics that come with it. We made a few different recipes, such as this super tasty apple radicchio salad, that are fresh, easy to make and just perfect to bring with you to any outing.
I love this recipe for a bunch of different reasons. First of all look at that picture! This is such a good looking salad. There are so many different colours and textures in the same bowl that will have you mouthwatering just by looking at the photo.
The second reason I'm so in love with this recipe is because of how practical and easy it is to make. I mean, you can have it ready in 10 minutes or less if you have some pro chopping skills. That's all there is to make our colourful radicchio salad. Just chop all the ingredients and mix everything in a bowl.
Radicchio salad is an easy way to load up on nutrients. It's made with just a few fresh and super healthy ingredients. So if you feel you are missing out on veggies or some healthy options while you're out barbecuing or in your midweek lunch menu this salad will get you covered.
I really wanted to incorporate radicchio into my recipes. To be honest, I wasn't a big fan of it when I first tried it. It has quite a bitter taste and I wasn't super impressed. But I had heard marvels about it and I learned the many health benefits it has so I decided to give it a second chance.
Radicchio is low in calories, sugars and carbohydrates, but it is super loaded with vitamins and minerals, providing an endless list of health benefits, here are just a few of them:
It's a super healthy veggie that adds a ton of flavour and texture to your salads. So, we just needed to address the bitterness. Dealing with it is not as hard as I thought it would be. A friend shared her raddichio-salad-making secrets with me and suggested to add something sweet and something sour.
That little trick made me completely change my mind. I had no idea that something so bitter could actually taste so good. With that said, this radicchio salad includes apples to get the sweet effect, and the dressing has the perfect amount of sourness to balance it all out.
Radicchio salad is now one of my go-to dishes for barbecues, picnics and any other social gatherings happening outside. It can sit on the table for a while without going bad, it is good for making ahead of time, and it is super affordable. Also, since it's so colourful it will catch everyone's eye and because it's so delicious you will go back home with an empty bowl! Guaranteed!
