Apple, Broccoli and Walnut Salad

A quick simple and easy recipe, the apple, broccoli and walnut salad is perfect for anyone and everyone. This salad is light and refreshing, perfect for any warm day.

Due to the weather warming up, I have made a couple of salad recipes this week to keep us on the cooler side. Because we all have those days where hot food on a hot day is just not going to happen. Now I know this might sound like a strange combination – who puts apple and broccoli together? Well, I did out of curiosity and was surprised by the result. What we end up with is a well-balanced, tasty salad that can be consumed at any time of the year. The apple provides a fresh, crisp taste while the broccoli gives us a more robust veggie flavour. And of course, our delicious walnuts top it off with a nutty goodness you simply can’t deny. 

And the best part? It’s soooo easy to make. 

How easy you ask? Well, all you will need is 10 minutes and 7 ingredients.


To start this dish off, we have broccoli. Broccoli is an amazing vegetable packed with an incredible list of nutrition including, but not limited to, dietary fibre, vitamin B6, vitamin E, magnesium, omega-3 fatty acids, protein, and calcium. You have the option to steam or boil your broccoli, both of which are fine. But if you want to go for a healthier option, steaming them is that little bit healthier. 

We then add our apple. You may want to take into consideration what apple you decide to use, as this will slightly change the taste. For example, if you use a green apple, the taste will be a lot sweeter compared to using a red one (which are usually crisper). Simply choose an apple that you prefer. Overall, apples are great sources of antioxidants and dietary fibre.

To top it off, we pop in some walnuts for good measure. These nutty little treasures give us a boost of omega-3, copper, and antioxidants. 

Apple broccoli and walnut salad is the perfect snack or side dish because: 

  • It’s easy to make.
  • Can be eaten hot or cold.
  • It’s easy to store.
  • Full of healthy fats.
  • Good source of dietary fibre – 4g per serve. 

Once you make this recipe, you can store it simply by putting it in the fridge in an airtight container.

Apple, broccoli and walnut salad

For the salad

  • 2 medium apple (chopped)
  • 7⅒ oz broccoli (chopped)
  • 1¾ oz walnut halves

For the dressing

  • 1 dash black pepper
  • 1 tablespoon extra virgin olive oil
  • ½ lemon (juice only)
  • 1 dash salt


  1. Steam or boil the broccoli for 5-7 minutes
  2. Place the broccoli in bowls, then the apple and walnut pieces.
  3. In a small bowl mix the dressing ingredients.
  4. Pour the dressing over the salad and serve.
