When I cook it is sometimes a bit of an experiment, I love the creative process and coming up with vegan recipes. I get a lot of inspiration from cuisines all over the world or from my son's cravings. You could say I'm always on the lookout for ways to make the vegan experience a lot easier and a lot tastier.
I do have to say that the experiments not always go as planned. Sometimes I don't love (or even like) what I make. But there are cases where the complete opposite happens. I'm not sure what's going to come out but I end up loving the end result and I can't wait to share it here with you.
That's exactly what happen with the recipe I have for you today. This almond butter drizzle was a big experiment. I used what I had at home and I wasn't sure what I would end up with. But I'm happy I followed my instincts with this one and not an actual recipe from the internet.
When I came up with this recipe I needed something to drizzle on top of a big stack of coconut pancakes. I didn't really want to use maple or agave syrup. It didn't feel like the right thing so I made this drizzle instead. Somehow I ended up with a perfect match, the drizzle enhanced the tropical flavour of the pancakes and added an extra touch of coconutty flavor to the pancakes.
And it was so easy to make. I mean, this is probably the easiest recipe you'll find in the entire web! Almond butter, coconut milk and dates go all in the blender for 5 minutes. Maybe less, just push that button until you have a smooth super silky consistency and that's it.
Since it's so easy to make and the flavour is just amazing, it got me thinking what else I could add it to. It didn't take long to come up with ideas, I wanted to add it to everything. And I am you will too! Personally, I love to pair it with fruit. I make a big bowl of cut fruit with granola and drizzle it all over. Banana bread is another great option; warm it up, drizzle some on top and enjoy with cup of coffee or tea.
There are many ways you can put this almond butter drizzle to use. Once you try it, the gears in your head will start spinning and it will be hard to stop them!
