Mac And Cheese with Greens and Nuts

For the topping

  • 4 cups baby spinach (cleaned)
  • 2 tsps cajun spice
  • 1 cup grated vegan cheese
  • ¼ cup mixed seeds
  • ½ cup nutritional yeast
  • 1½ tsps sea salt
  • ¼ cup soy cream
  • 1 cup soy milk

For the Pasta

  • 12 oz macaroni pasta


  1. Cook the pasta according to the instructions on the package.
  2. Add the liquids to a saucepan, together with the cajun spice, nutritional yeast and the vegan cheese.
  3. Simmer until you get a homogeneous mixture.
  4. Mix the pasta with the sauce and the baby spinach, adjust taste and serve with some nuts on top, enjoy!
