For the soup

  • 1 cup brown lentils (rinsed)
  • 1 cup coconut milk
  • 2 cups crushed tomato
  • 1 inch fresh ginger (minced)
  • 2 cloves garlic (minced)
  • 1 tsp maple syrup (optional)
  • 1 tbsp masala powder
  • 4 tbsps nutritional yeast
  • 1 tsp olive oil
  • 1 medium red onion (thinly sliced)
  • 1 tsp sea salt
  • 3 cups vegetable broth

For the rice

  • 1 cup rice


  1. Boil the rice in water until soft for about 30 minutes.
  2. Heat up the oil in a big pot and roast the spices for about 1 minute.
  3. Add ginger and onion and saute for about 3-5 minutes, add garlic and saute for an additional 30 seconds.
  4. Add the lentils together with the liquids and crushed tomatoes and simmer until soft for about 30 minutes.
  5. Lastly stir in the nutritional yeast and add more water if you like, adjust the taste of the soup and serve it with the rice, enjoy!
