  • ½ cup almond flour (toasted)
  • 1 cup coconut milk
  • 2 cups frozen cauliflower (unthawed and chopped)
  • ½ cup frozen garden herbs (unthaw)
  • 2 cups frozen spinach (unthawed and chopped)
  • 4 cloves garlic (minced)
  • ½ cup nutritional yeast
  • 1 tablespoon olive oil
  • 1 lb potato gnocchi
  • 1 medium red onion (thinly sliced)
  • 1½ cups vegetable broth


  1. Heat up a big pot of water and boil the gnocchi until the start floating on the top.
  2. Take them out and add them to a frying pan together with some of the oil and roast them from all sides until golden brown for about 10 minutes.
  3. Set the gnocchi aside and use the same frying pan, add the rest of the oil and stir fry the onion, garlic and cauliflower for about 5 minutes.
  4. Add the cauliflower stir fry and vegetable broth to a blender and blend until smooth.
  5. Use the frying pan again and combine the gnocchi with the sauce from the blender together with the spinach, nutritional yeast, herbs and coconut milk.
  6. Heat everything up properly and adjust taste, sprinkle with the toasted almond flour before serving, enjoy!
