A no-bake, healthy, vegan dessert that is also absolutely delicious! This super easy-to-make Berry Yogurt Parfait is proof that you CAN have it all! It will take you less than 10 minutes to put together this beauty and it will satisfy all your sweet cravings.
I wish I could have dessert every single day after every single meal. But being realistic, that might not be the healthiest way to go. And sometimes, I barely have time to eat lunch, let alone dessert.
If I wanted to have dessert more often I needed to come up with a healthy dessert recipe and something I could put together in a whiff, nothing too complicated. Also, when you have kids you always have to consider making some for them, you won't get away with eating dessert on your own.
I made this vegan dessert as kid-friendly as possible and my little boy loves it. Sometimes, he even helps me put the individual portions together. I like using mason jars or small glasses, the layers look so pretty. But any small bowl will work just as well.
We need just a few ingredients, blueberry jam, frozen mixed berries, hemp hearts, slivered almonds, and soy yogurt. As you can see, everything is readily available at most supermarkets.
Usually, I have frozen berries stashed in my freezer and I use them for a bunch of things. We love mixed berries but work with what you have. You can add whatever kind of berries you have or if you have a favourite, go for it.
I use soy yogurt but this is another thing that can be switched around. Nowadays, there are so many non-dairy options and they're all super delicious and creamy. I've used coconut yogurt as well and it's amazing. Coconut or nut yogurts have more fats and the amount of protein is quite different from soy yogurt, so consider the nutrition facts changing a bit.
We were after a healthy vegan dessert recipe and one of my favourite ingredients to bump up nutrition in any meal is hemp hearts. I don't use them as much as I'd like to but hemp hearts add protein, omegas 3 and 6, vitamins, minerals and are jammed-packed with antioxidants. They are seriously a gem.
You have all the ingredients you need, now it's time to put it all together. This is seriously the easiest recipe ever. You only need to layer-up all the different ingredients and that is it. Start with a layer of yogurt, then add the berries, the jam, hemp hearts and almonds, all in that order.
Now that you have everything layered at least once, add a second scoop of yogurt. To finish it off throw in a mix of hemp seed and almond and decorate with some berries. Make sure to start stuffing your face straight away so the berries don't melt too much. And make sure to make double servings for everyone because, believe me, you will need them!
